Autumn Black Truffle

Tuber Uncinatum Chatin

The aroma is similar to hazelnut and is more intense than the Black Summer Truffle, which many truffle experts consider as a twin brother of Tuber Uncinatum. The marbling is initially whitish, then hazel and in the end, brown with crowded whitish veins. It is recommended to pair this truffle with any of our truffle products. Harvest period is between September and December.

Winter Black Truffle

Tuber Melanosporum

A top choice among leading restaurants and food connoisseurs. This is the most expensive sort of black truffles in the world, regularly cultivated in Spain, Italy, France, Chile and Australia during winter months. These beauties possess a rich, complex and intense chocolate aroma, boasting a flavour that is difficult to forget. Harvest period is between December and March.

Spring White Truffle

Tuber Borchii

Also known as the Bianchetto or Marzuolo, the White Spring Truffle has a unique, more pungent garlicky aroma compared to the Precious White Truffle. We find it close to the Adriatic and Black sea coast in Balkan peninsula. Harvest period is between March and May.

Summer Black Truffle

Tuber Aestivum

*

The Black Summer truffle or Scorzone can grow in very different environments because it is the fungus that best suits the climatic conditions. It develops on soils with abundant content of limestone and permeability, enduring the prolonged summer drought.

It can reach considerable sizes, and it’s very similar to the Black Autumn Truffle with its dark brownish color. When cut, it differs from the finer brother since its flash tends to a dark yellow. The harvest period for this sort of truffle is from May to August.
